Zatarain's is a food and spice company based in Gretna, La., that was founded in New Orleans, La., in 1889—as Papoose Pure Food Products.
Emile Zatarain Sr., actually started the business as a grocery store in 1886. He created a formulation for root beer that became popular regionally after its introduction in May 1889, at the Louisiana (Purchase) Exposition under the brand Papoose Root Beer. He trademarked the brand and recipe, created Papoose Pure Food Products, built a factory, and took the beverage to market all in 1889.
